Chiapas Nantic
Nantic means 'our mother' in the Mayan Tzeltal language. In the prominent coffee region of the Chiapas highlands, a group of 385 Indigenous women producers carry on their family legacy, applying intergenerational knowledge to lead the production of this specialty coffee.
At a high altitude of 1,200 meters, these coffee cherries grows slowly in the shade of native trees in the cool mountain air, taking its time to develop a balance of complex sugars and acids. The mineral-rich volcanic soil contributes to a full-body and well rounded flavour. As common practice in the Chiapas, producers use a washed method to process the beans, which creates a clean and bright cup.
These little gems are roasted to bring out notes of chocolate, praline, butterscotch, and citrus.
